Tofu week: Burgers

So I’ve posted quite a lot about tofu in the past, though never as much as I plan to during this week. I firmly believe (no pun intended) that tofu is, hands down, the most versatile vegan ingredient. It’s also cheap (you can get it for under 5€/kg where I live), has a neutral taste and can be shaped as desired. Really, the options are endless, so ask not what you can, but what you can’t do with tofu – chances are, it will be hard to come up with an answer 🙂

Today, I’d like to present my recipe method of making tofu burger patties. There really isn’t just one way to make them, and I like to mix it up a little each time I make them. The core elements are tofu and cooked grains in a 1:1 ratio, held together by some tapioca flour or other starch; you can twist the spices the way you like them. The presented millet burgers have a delicious crunch to them once fried, and they’re also gluten-free 🙂

Ingredients for 2:

  • 100 g tofu
  • 1/3 cup of millet
  • 1 tsp of tapioca flour
  • 2 tbsp of shoyu sauce
  • 1 tbsp of tomato concentrate
  • 1 tbsp of olive oil
  • onion powder
  • garlic powder
  • marjoram
  • paprika

First, cook the millet in a small pot, using 2.5× the amount of water. It will take 20 minutes, so in the meantime, prepare the tofu mixture. Mash up the tofu in a bowl with a fork, then season it with the onion, garlic, marjoram and paprika. Add the tomato concentrate and olive oil, mixing well. Once the millet is cooked, add that to the tofu as well, and then season with the soy sauce. Let cool.

Once the tofu mixture is cool enough to handle, add the tapioca and mix well. Shape into patties using your hands, making sure to make them about the size of a palm and about 1 to 1.5 cm thick. Grill them in a lightly greased skillet over medium-high heat until lightly browned and crunchy. Serve between two slices of bread with some greens and vegan mayonnaise, and eat in front of the TV 😛
